Chicken Burgers



Ingredients:

·         2 boneless, skinless chicken breasts
·         1 egg, lightly beaten
·         seasoned bread crumbs with corliander
·         3 tbsp olive oil
·         4 large slices tasty cheese
·         4 hamburger buns, split,
·         1/3 cup whole-egg mayonnaise
·         3 iceberg lettuce leaves, finely shredded
·         2 tomatoes, thinly sliced
·         12 slices cucumber

Method:

1.      Preheat the oven to 180 C.
2.      Make sure your boneless, skinless chicken breasts are thin by either slicing them in      half or pounding them flatter
3.      season the chicken breasts with salt and pepper.
4.      Dip the chicken first into flour, shaking off any excess. Then dip it into the egg, shaking off any excess. Finally, dip it into the seasoned bread crumbs.
5.      Lay the breaded chicken on the frying pan,
6.      Spread hamburger bun bases with mayonnaise and ketchup. Place chicken breasts on buns, Top with lettuce, tomato, cucumber, cheese. Cover with bun tops.

7.      Bake for 5 mins in the preheated oven.

8.      Serve with chips

Chicken Puff Pastry Plait


Ingredients:

·         2 skinless chicken breasts, each halved across the middle to make 2 thin escalopes

·         1 pack rolled puff pastry

·         Mozzarella, grated

·         4 slices smoked bacon

·         Salt, pepper, to season

·         Egg, lightly beaten

Method
1.      Season the chicken breast with seasoning salt and pepper on all sides.

2.      Unfold the pastry sheet on a lightly floured surface

3.      Roll the pastry sheet

4.      Cut into 4 rectangles

5.      Place each breast down the centre of the pastry rectangle

6.      Top breasts with bacon and grated mozzarella cheese

7.      With a sharp knife, cut slits 4cm/1in apart, 1cm/½in away from the breast to the edge of the pastry, slanting away from you.

8.      Starting at the end nearest to you, fold the pastry alternately over each other, to give a 'plait'** effect. Brush the top with beaten egg. (**See below)

9.  Bake for about 30 minutes, or until puffed and golden brown.
